Tied to Bergen
The Bergen version of fiskesuppe is creamy rather than tomato-based — pollack or cod, root vegetables, cream, white wine, dill. Almost every restaurant in the old town serves a competent one; the differences are at the margins. The fish market itself does a serviceable bowl, but for a proper sit-down version, locals point to Bryggeloftet & Stuene or, for something newer, Lysverket in the Kunsthall building.
What we plan to try
A bowl on the first day, before we’ve eaten anything else. A second bowl on the third day, to see if we still like it.
